Indian Street Food: Onion Rava Masala Dosa

Indian Street Food:

We were very, very lucky to be visiting Sangeetha pure vegetarian restaurant (located in Hounslow West); where Master Chef Prakash reveals some of his recipe secrets into how to make the perfect Onion Rava Masala Dosa & Pizza Uthappam.

Rava Dosa Batter:

* Rice flour.
* Semolina flour.
* Ginger.
* Curry leaf.
* Coriander.
* Salt.
* Fenugreek.

Masala filling (lightly spiced):

* Onion.
* Potato.
* Carrot.
* Green peas.
* Green coriander.

Pizza Uttapam (contains rice flour, urad dal & water) it is the same battery as used for making normal Dosa’s; but spread on the hot griddle a lot thicker, it’s then topped with:

* Chopped green capsicum.
* Chopped tomato.
* Chopped red onion.
* Green chili.
* Freshly chopped green coriander.
* Black pepper.
* Gunpowder.
* Vegetable oil.

They are both served with three delicious chutneys’:

White Coconut Chutney:

* Coconut.
* Roasted chana.
* Green chili.
* Ginger.

Green Coriander Chutney:

* Green coriander.
* Roasted chana.
* Green chili.

Red Tomato Chutney:

* Onion.
* Tomato.
* Red chili.

Also served is a South Indian Sambar (spicy lentil soup):
* Onion.
* Tomato.
* Tamarind.
* Dal.

If you sit in Sangeetha Vegetarian restaurant you’d be forgiven if you imagined or thought that it is a South Indian “Masala Dosa” “hotel” or stall (or “Lari”) somewhere on the busy, bustling streets or beaches of India – astonishingly these guys were making these Indian street food favourites in the heart of “Proper London” – making them freshly cooked to order and serving them piping hot within a matter of minutes………delicious restaurant quality food; but at affordable street food prices!!!

Dosas are a ubiquitous and very popular food in India. The (eggless) dosa batter is made of fermented Rice, Urad Dal & Fenugreek Seeds), which is then cooked on a hot griddle (in a very similar way to a French Crepe Suzette or Galette or even a Chinese Jian Bing) until it’s crispy & then filled with a delicious spicy combination of Mashed Potato, Peas, Carrot & Onion.

……………these guys make it look very easy, but it takes many years of practice to make perfect Rava Dosas’ & Uthappams’ just like you see here (Chef Prakash has worked for Sangeetha restaurant for over 30 years).
